hugs, kisses and blueberry crisp

we were so grateful to have ty's mom and sis come up for the week and take care of us. we had a really great time.
abby thought it was really funny to keep her eyes closed
taryn made a new recipe from martha stewart for blueberry crisp. it was, as abby would say, "alicious!"

ps-isn't taryn a betty in that apron?
pps-no abby does not have a mullet that bad-her hair is falling out of her pony. sheesh.

blueberry crisp
serves 6
Filling:
6 c (3 pints) blueberries (we used frozen and it turned out fine)
1/2 c sugar
1 T cornstarch
1 t fresh lemon juice
1/4 t coarse salt

Topping:
3/4 c all-purpose flour
1/2 c rolled oats (or chopped nuts, such as almonds)
1/2 t baking powder
1/2 t coarse salt
3 oz (6 T) unsalted butter, softened
1/3 c sugar


1. Preheat oven to 375*. Make the filling: Mix blueberries, sugar, cornstarch, lemon juice and salt in a bowl. Transfer to 8-inch square baking dish
2. Make topping: Stir together flour, oats, baking powder, and salt. Cream butter and sugar in mixer until pale and lfuffy. Stir dry ingredients into butter. Using your hands (the girls love this part) squeeze topping pieces together into clumps.
3. Sprinkle topping evenly over filling. Bake until bubbling in center and brown on top, about 1 hour. Transfer to wire rack and let cool 30 minutes before serving.
*fyi* you can make and freeze extra batches of the topping and use it whenever you have fresh fruit around.
